Dinner & Dessert...

I have been cooking like crazy this week! I guess that is what happens when it is FREEZING Cold outside...These are seriously so quick and easy and Especially delicious.

I also have been the "Sneaky Chef" to my kids, and made yummy French toast with Pumpkin in the Mix, and they have no idea, it's so fun! I may be a little to excited about that, cause i try to Sneak all these Puree's into everything, even Ice Cream Shakes! (IT Works)




"Raspberry Chapotle Bean dip "

2-3 T. Butter
2 Cloves Garlic (minced)
1/2 Onion Chopped fine
2 Cans of Black beans (drained & rinsed)
1 Can of Corn (drained)
1 8oz pkg of Cream Cheese
(partially melted)
1 Bottle of Bronco Bob's Roasted Raspberry Chapotle Sauce (at target by the BBQ Sauce)
1 Sm. can of Green Chilies
1 Sm. can of Sliced Olives
+ Grated Cheddar cheese(enough to generously cover the top)

Mix~ Butter, Garlic, and Onion together. Spread on Bottom of a Deep 9X13
Layer with Black Beans, Corn, Cream Cheese, 1/2 the Chapotle Sauce, Green Chilies,Olives, Cheese, and then the Rest of the sauce. Bake at 350 for 25 minutes. Serve Hot with Tortilla Chips. I love it in Soft Tacos or Burritos!

Oh and For the Best Dessert...


"The Best Chocolate Cake EVER"

1 yellow Cake mix
1 sm. instant chocolate pudding mix
1/2 C. Sugar
~Mix with a wire wisk to remove all the lumps


ADD: 3/4 C. Vegatable Oil
3/4 C. water
3 eggs
1 C. Sour cream
1C. Semi sweet choc chips

~Spray Bundt pan, and Pour mix into the Pan
Bake at 350 for 60 Min.

Kelli's chocolate cake is dangerous. I can't even make it cause I'll eat too much! Maybe for Valentines or something special. I really need to try the sneaky chef stuff. Maybe my kids would stop getting sick if I would beef up their vitamins!

Looks yummy! I've been the super chef this week too! 5 nights out of 6 I have made dinner--the other night Shea was helping Cory and then at Young Mens. I feel pretty good about that effort!

Looks so yummie, I will have to make the chocolate cake if i ever can find a bundt pan. That was one pan I need!

These recipies look great!! I'm always on the look out for yummy recipies. I'm going to try these. Is Target the only place that carries that barbeque sauce??

Jodi~ Yes the sauce is only at Target. It is so yummy and tastes better than it looks!

Yummy, yummy - those are both favorites of ours! I just made 2 huge pans of that dip on New Year's Eve and I'm making it for daph's house [her in-laws mission farewell lunch] on Sunday. But, ahhh - next time it would be a friendly neighborly thing to do - call me when you cook yummies!
